The
Dalmore - 12 year old - 40%
Cask:
Aged in 70%
American white oak casks and 30% Oloroso Sherry casks from Gonzalez
Byass.
Colour:
Rich, deep,
golden mahogany.
Nose:
Intense and
firm. Well structured with silky smooth malty tones—a hint of Olorosso
sherry lingers in the background. It demonstrates great finesse,
extolling fragrances of orange and marmalade along with spiced notes.
Palate:
Good attack
on the mouth, more elegance than muscle. The aged Olorosso is rich and
fleshy, and its body harmonizes nicely with the malt. Almost a
concentrated citric mouth-feel captivates and tantalizes the middle part
of your tongue. An aftertaste of great abundance rewards the palate. A
Highland malt of great distinction.
Finish:
Toast, cereal and long. |

The
Dalmore - 21 year old - 43%
Cask:
Aged in 97%
American white oak casks and 3% Oloroso Sherry casks.
Colour:
Intense amber
gold with shimmering radiant highlights.
Nose:
Bold and
majestic. The hand of time has molded and nurtured this noble spirit to
reveal a classic array of rare and attractive nuances. Although the
gentle wood tones of oak and Olorosso play a major part of its formation,
the overall contribution has been perfectly balanced. In accordance with
its long maturation, other elements, such as its close association with
the sea and strong easterly winds from the Cromarty Firth, are also
reflected in the initial bouquet. The final rewards are the subtle hints
of orange peel, honey and roasted almonds.
Palate:
The first
taste makes is full impact as the spirit explodes its rare spectrum of
flavors on the tongue to reveal its true identity—full, rich, seductive,
well balanced by unobtrusive structure. Each attribute has been
harmoniously balanced to enrich the palate. Allowing this aged malt to
drift and roll on the tongue further extends the unforgettable journey
that continues to unfold.
Finish:
A hint of citrus and a hint of smoke. |

Cask:
Sherry.
Colour:
Deep, golden
mahogany.
Nose:
Firm and
positive. An outstanding array of malty congeners explode in a complex,
distinguished manner. Elegant and refined. Pleasant notes of citrus,
heavy fruits flaunt themselves in a stylish but forceful bouquet - yet
an even balance prevails as the softest tones complete this gallery of
aromas.
Palate:
The strong malty flavours tantalise the tongue - covering it with a
cloak of classic flavours, which linger long the mouth. This outstanding
taste is a perfect accompaniment with the finest tobacco - both
compliment each other. However, to fully appreciate these fine
attributes time must be allowed in the mouth - the repository of
knowledge and fulfilment. A multitude of flavours rise to the occasion
and generate a glowing aftertaste.
